Feta PDO & Avocado toast with poached eggs

Feta is a traditional and certified Greek cheese with high nutritional value and rich taste that goes well with almost  all food products. It comes from sheep’s milk, or a mixture of sheep and up to 30% goat’s milk. 

Look for the PDO sign (Protected Designation of Origin) which ensures the quality, the uniqueness and  the authenticity of Feta.  

Feta PDO and avocado toast with poached eggs

Ingredients:

• 2 tbsp white wine vinegar 

• 2 large eggs 

• 1 large ripe avocado 

• 100g feta 

• ½ lemon juice  

• 2 thick slices of sourdough bread  

• 8-9 cherry tomatoes chopped for decoration  

• 2 tsps of chopped parsley or chives for decoration 

• 50g feta pdo for decoration 

Instructions:

Fill a large saucepan with water, add the vinegar and bring to a hard boil over a high heat. Once boiling, reduce the  heat so the water is simmering, then use a spoon to swirl the water into a whirlpool. Crack in both eggs and cook  for 2 1/2 mins. Meanwhile, in a small bowl, mash the avocado, the feta, some chopped parsley and lemon juice,  and season well with black pepper. Then, toast the bread. 

Spread the avocado on the toast, and then put a poached egg on top of each. Sprinkle with the chopped parsley or  chives and spread on the plate feta and some cherry tomatoes.
