Blood Orange Mojito Sparkling Slush
Serves 2
• 25 mint leaves, divided
• 1/2 cup sugar
• 1/2 cup water
• 1/2 cup blood orange juice (approx. 6 blood oranges)
• 2 tbsp fresh lime juice (approx. 1 to 2 limes)
• 1 cup sparkling water
• Optional: 2 oz rum, divided
To make a mint simple syrup, heat the sugar, water and 15 mint leaves in a small saucepan over medium heat. Allow to simmer for 3 minutes and remove from the heat. Without removing the mint, chill the simple syrup for at least an hour in the refrigerator. Strain and discard the mint.
Stir the simple syrup with the blood orange juice, lime juice, sparkling water and remaining mint leaves. Pour into the Slush & Shake Maker. Stir until slushy then add rum. The mixture will thin out. Stir until thick.
